How about a One-Pan Garlic Butter Shrimp & Veggies?
Ingredients:
1 lb shrimp, peeled and deveined
2 cups broccoli florets
1 bell pepper, sliced
1 zucchini, sliced
3 garlic cloves, minced
2 tbsp butter
1 tbsp olive oil
1 tsp paprika
Salt and pepper to taste
Lemon wedges
Fresh parsley for garnish
Instructions:
- Heat olive oil in a large pan over medium heat.
- Add garlic and sauté until fragrant.
- Add the shrimp, paprika, salt, and pepper. Cook until shrimp turn pink (about 2-3 minutes per side), then set them aside.
- In the same pan, add butter, broccoli, bell pepper, and zucchini. Sauté until veggies are tender.
- Return shrimp to the pan, mix everything, and cook for another minute.
- Serve with a squeeze of lemon and garnish with parsley.
