How about a One-Pan Garlic Butter Shrimp & Veggies?

Ingredients:

1 lb shrimp, peeled and deveined

2 cups broccoli florets

1 bell pepper, sliced

1 zucchini, sliced

3 garlic cloves, minced

2 tbsp butter

1 tbsp olive oil

1 tsp paprika

Salt and pepper to taste

Lemon wedges

Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Add the shrimp, paprika, salt, and pepper. Cook until shrimp turn pink (about 2-3 minutes per side), then set them aside.
  4. In the same pan, add butter, broccoli, bell pepper, and zucchini. Sauté until veggies are tender.
  5. Return shrimp to the pan, mix everything, and cook for another minute.
  6. Serve with a squeeze of lemon and garnish with parsley.
