Pizza Quattro Formaggi

Here’s a recipe to make a classic Pizza Quattro Formaggi (Four Cheese Pizza):

Ingredients

For the pizza dough:

2 ½ cups all-purpose flour

1 cup warm water (about 110°F or 45°C)

1 packet (2 ¼ tsp) active dry yeast

1 tsp sugar

1 tsp salt

1 tbsp olive oil

For the sauce:

½ cup tomato sauce (optional, traditionally no sauce is used)

1 garlic clove, minced (if using sauce)

1 tbsp olive oil (if using sauce)

A pinch of salt and pepper

For the cheese topping:

100g mozzarella, shredded or sliced

60g gorgonzola, crumbled

60g fontina, shredded

60g Parmigiano Reggiano (Parmesan), grated

Fresh basil leaves (optional, for garnish)

Olive oil for drizzling

Instructions

  1. Prepare the dough:

In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until it becomes frothy.

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

Mix until the dough comes together, then knead on a floured surface for about 10 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 1-1.5 hours, or until doubled in size.

  1. Prepare the sauce (optional):

If you prefer sauce on your pizza, mix the tomato sauce, garlic, olive oil, salt, and pepper in a bowl. Set aside.

  1. Assemble the pizza:

Preheat your oven to 475°F (250°C). If you have a pizza stone, place it in the oven to heat.

Punch down the dough and roll it out on a floured surface to your desired thickness.

Transfer the dough to a pizza peel or baking sheet.

If using sauce, spread a thin layer over the dough, leaving a small border around the edges.

Distribute the mozzarella, gorgonzola, fontina, and Parmesan evenly over the pizza.

  1. Bake the pizza:

Place the pizza in the preheated oven and bake for 10-12 minutes or until the crust is golden and the cheese is melted and bubbly.

If you like a crispy crust, you can broil it for an additional 1-2 minutes at the end.

Drizzle with a bit of olive oil, add fresh basil leaves if desired, and serve hot!
