pumpkin soup 🍲

Here’s a simple and delicious Pumpkin Soup recipe that’s perfect for fall:

Ingredients:

1 medium pumpkin (or 4 cups pumpkin puree)

1 tbsp olive oil or butter

1 onion, diced

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream or coconut milk (for a dairy-free option)

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger (optional)

Salt and pepper to taste

Fresh herbs like thyme or parsley (for garnish)

Instructions:

  1. Prepare the Pumpkin:

If using a fresh pumpkin:

Cut the pumpkin in half, remove the seeds, and place it cut-side down on a baking sheet.

Roast at 375°F (190°C) for about 40-50 minutes, or until tender. Let it cool, then scoop out the flesh.

You will need about 4 cups of pumpkin flesh for the soup.

Alternatively, you can use canned pumpkin puree for convenience.

  1. Sauté the Aromatics:

In a large pot, heat the olive oil or butter over medium heat.

Add the diced onion and sauté until soft and translucent (about 5 minutes).

Add the garlic and cook for another minute until fragrant.

  1. Add the Pumpkin and Broth:

Add the roasted pumpkin (or canned pumpkin puree) to the pot and stir to combine.

Pour in the vegetable or chicken broth.

Bring the mixture to a boil, then reduce the heat and simmer for 10-15 minutes to allow the flavors to meld.

  1. Blend the Soup:

Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, you can carefully transfer the soup to a blender and blend in batches.

Be cautious when blending hot liquids — let the soup cool slightly before blending, and don’t fill the blender too full.

  1. Add Cream and Seasonings:

Return the blended soup to the pot (if using a blender).

Stir in the heavy cream or coconut milk for a rich, creamy texture.

Add the cinnamon, nutmeg, ginger (optional), salt, and pepper to taste.

Let the soup simmer for another 5 minutes, stirring occasionally.

  1. Serve and Garnish:

Ladle the soup into bowls.

Garnish with fresh herbs like parsley or thyme, and if you like, a drizzle of extra cream or a sprinkle of toasted pumpkin seeds.

Optional Variations:

Spiced Pumpkin Soup: Add a pinch of cayenne pepper or red pepper flakes for a hint of spice.

Sweet and Savory Twist: Stir in a tablespoon of maple syrup or honey for a subtle sweetness.

Curried Pumpkin Soup: Add 1-2 teaspoons of curry powder to the soup for a flavorful twist.

This Pumpkin Soup is creamy, comforting, and full of fall flavors. Serve it with crusty bread or a side salad for a complete meal!
