2 tbsp olive oil

1 onion, chopped

4 cloves garlic, minced

2 carrots, diced

2 celery stalks, chopped

2 potatoes, diced

1 zucchini, chopped

1 cup green beans, trimmed and chopped

1 can (14 oz) diced tomatoes

4 cups vegetable broth

1 tsp thyme

1 tsp oregano

1 bay leaf

Salt and pepper to taste

1 cup kale or spinach, chopped (optional)

1 tbsp fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, and sauté for about 5 minutes until softened and fragrant.
  2. Add the Vegetables: Stir in the carrots, celery, potatoes, zucchini, and green beans. Cook for another 5 minutes, stirring occasionally, to slightly soften the vegetables.
  3. Add Tomatoes and Broth: Pour in the diced tomatoes (with their juices) and vegetable broth. Add thyme, oregano, and the bay leaf. Stir well to combine.
